Shiitake Mushroom Oil

Algae Cooking Club is offering a discount if you buy two or more bottles of their oil, and I wouldn’t pass up the opportunity. I discovered this company when I was working on a mushroom-themed gift guide, and I can never go back. They offer lots of variations of their infamous algae oil, but so far, my favorite has been the shiitake mushroom-infused bottle that provides the perfect umami kick to any recipe.

Created in collaboration with Eleven Madison Park and chef Daniel Hamm, it’s made with dried shiitake, red miso, black miso, kombu, urfa chili, wakame, and vitamin E. It’s 100 percent high-oleic algae oil, which means 25 percent more omega-9s and 75 percent less saturated fat than olive or avocado oil. I add fried rice, grilled vegetables and broth. Flavorful, smoky, and deeply earthy.
