I didn’t realize that using a cheap, very blunt knife as my daily driver was slowing down my cooking process, giving less effective cuts, and even putting me at risk for injury, because the blade was blunt and I had to apply more pressure (which made things more dangerous). I believe in the importance of investing in A Good-Ass Knife.
Plus, they make really wonderful gifts, too. Every kitchen (and home chef) needs a solid chef’s knife for chopping, slicing, and chopping ingredients with speed and precision. Most people get knife sets for wedding gifts (which I think is baloney, BTW) and then neglect proper maintenance, causing the knives to become blunt and wear out quickly.
Chances are, the person you’re shopping for this holiday season (even if it’s you!) needs a better knife for their kitchen. I’m totally crazy about these beautiful, USA-made chef’s knives from New West Knifeworks. Each is a practical, elegant gift that is sophisticated but different from the usual norms, like a cashmere sweater or a gift card. And they have 20 percent off for Black Friday (through December 2).

Typically, a chef’s knife has a super-sharp end point and a curved, sloped edge that is designed to work with a natural rocking motion for quick cutting that also allows for better cuts. I have a small hand, so I like this more petite chopper knife option for quick tasks that require more fine chopping, like mirepoix or herbs.
The blade of this USA-made, 5-inch chopper is made from particle metallurgy steel, which is a popular choice for chefs because it stays sharp, holds an edge well, is stain-resistant, and is generally very tough. The blade is seamlessly integrated into the handle for greater balance, and the handle is made of nearly indestructible aerospace-grade, fiberglass-epoxy composite material that’s available in several stylish colors (so you can personalize it for the person you’re gifting it to). Plus, it comes with a beautiful leather sheath for safe storage.
Similar to my pick above, this luxury new West Knifeworks knife is absolutely gorgeous, with a bold red and white handle and a raised leather sheath. (Then again, who wouldn’t love this as a gift?!) It’s perfect for the hobbyist or home chef. Created in collaboration with nutritionist and TV personality Joey Bauer, this 6-inch Santoku knife has a downward-facing blade and a sturdy top slope, and is made of American-made 440C stainless steel. Unlike the other picks above, which are a traditional German chef’s knife style, this one uses a straight edge for precision. With this Japanese Santoku-style knife, you’ll make straight cuts using the entire blade at once, or use only the pointed tip for precise, thin cuts.
